08 July 2011 – Back to the Freezer

If you are just cooking for one – like when the wife goes to visit her mom or sorority sisters or when ever you are on your own. This is a good time to either see what is hiding in the freezer or to buy some stuff to put there. Keep a few single serving frozen meals on hand for those times when you just don’t want to make a mess of the kitchen.

There is a lot you can to to boost up those frozen meals to make them a bit more appealing.

Last night I was in the mood for pasta and was not about to make it from scratch. So I grabbed a package of my favorite chicken fettuccine alfredo from the freezer. Lean Cuisine – yes that’s right, you heard me clearly. I like it, better flavor than the full fat varieties. That said please don’t think that this is the end of the story. I wanted a bit more protein and a little more richness to the dish so that I didn’t find myself “sleep eating” from the fridge five hours later.

To boost it up I found a bit of some Andouille sausage that I bought a couple weeks back and also added some fresh mozzarella cheese and sharp cheddar that I picked up this week. I finished it off with some chopped fresh chives and cracked black pepper.

04 July 2011 – It’s Been a While

I haven’t posted in a few weeks now or so it seems. I have been cooking and with the cooking comes a little photography. So tonight I will try to sum up the cooking with a few photos.

I will start with a spicy snack.

Next on the list is Chicken fingers or Chicken tenders, which ever you prefer. I have cooked a lot of chicken in my day but this time around I wanted to marinate in spiced butter milk and fry in peanut oil. It is the way to go for sure. Crispy, golden, juicy and delicious.

The great thing about leftovers is that I get to eat them. I reheated the leftover tenders the next day with some spicy BBQ and Dijon mustard dipping sauces.

A few days later cooking from home I decided on an old standby Lean Cuisine Chicken Fettucini Alfredo – I boosted it will some minced up aged pepper salami. Great flavors going on here – it is worth a try. Continue reading
